Potato and Brinjal Bharta

Spiced Potato and Brinjal cooked with tangy tomato, perfect for puris and dosa.

The original recipe does not call for brinjal. I love adding fried brinjals to most of my recipes including biriyani. I simply marinated a few brinjal wedges in some tamarind paste and fried it before adding it to the potato bharta.
