Healthy green smoothie for the whole family, juicing vegetables with fruits is a better alternative to cooking it and losing all the vitamins. I was surprised that Winter melon benefits include preventing migraines, strokes, best for heart, eye, digestive, kidney health and its loaded with vitamins. Adding pear and green apple to the smoothie sweetens the drink because winter melon itself is bland tasting. Wintermelon has a lot of water content, so I dont add extra water but if I find the smoothie is too sweet, I add a glass of water to balance the taste.
Wintermelon (Ashgourd) – 1 whole,peeled and quartered
Pear – 1 no, peeled and quartered
Green apple – 1 no, Peeled and quartered
Water – 1 glass (optional)
I use my juicer machine for this recipe and I run all the ingredients through the Juicer and its ready to drink!
Spiced Potato and Brinjal cooked with tangy tomato, perfect for puris and dosa.
The original recipe does not call for brinjal. I love adding fried brinjals to most of my recipes including biriyani. I simply marinated a few brinjal wedges in some tamarind paste and fried it before adding it to the potato bharta.
Green Apple – 1 no
Ripe Banana – 1 no
Fresh spinach – 1 handful
icecubes – 5 nos
Blend all the above ingredients.Served with oven baked broccoli (seasoned with salt and coconut oil) and freshly boiled eggs.
Frozen/Fresh Okra(Lady’s finger)
Chopped Onions – 3 pc
Chopped tomato – 1 pc
Turmeric powder – a pinch
Chilli powder – 1 tsp
Garam masala – 1 tsp
salt – for taste
Olive oil for frying
Defrost the frozen Okra. Cut defrosted/ fresh okra into small pieces and remove any moisture using paper towel or kitchen cloth. Fry the Okra pieces for 3-4 minutes in a deep pan with hot olive oil. After frying, place the fried okras in paper towel to remove excess oil. In another pan, sauté chopped onions. Add tomato, powdered spices and fried okra in the end. Season it with salt according to taste. Let it cook in low heat till done.
This dish is best served with plain boiled white rice and it makes a hearty vegetarian meal!!
As part of my gluten-free initiative, I have introduced this healthy snack for my afternoon break. This recipe is basically a no-sweat three step process. The healthier alternative to frying the cakes would be to add ¼ cup water to the ground mixture and pan fry it in non-stick pan without oil.
Moong Dal(green gram) – 1 cup soaked overnight
Tuvar Dal(split pigeon peas) – 1/2 cup soaked overnight
Quick Oats – 1 cup
Crushed Garlic– 2 cloves(optional)
Green Chilli- deseeded and finely chopped
Cumin powder-1 tsp
Red chilli powder- 1 tsp
Black pepper powder -1 tsp
Salt- 1 tsp
Oil for frying
Grind all the above ingredients to form a coarse paste. Shape the paste into small round cakes/cutlets. Deep fry in hot oil and serve the crunchy cakes piping hot with yoghurt dipping or sauce.
Cauliflower Florets, cut into bite size pcs
One cup Maida
Two tblsp Cornflour
Red Chilli Powder
One cup Oats
Mix all the ingredients for the batter.Dip the cauliflower pcs in the batter and drop in hot oil. Deep fry in low heat till crispy.I accidently discovered that adding oats to the batter render a crispy coating to the fried vegetable.By far, this is the best recipe I’ve tried for cauliflower fry.
White Kidney Beans – 1 can drained
Frozen small shrimps – 300 gms
Carrot – 1 large,cut into bite sized wedges
Green Peas – 100 gms

soak chana dal and black eyed beans together overnight. pressure cook the dals till cooked.meanwhile saute onions well,add half tomato,a tblsp of ketchup,turmeric powder,chilli powder, garam masala,a tblsp of coriander powder and cumin powder.add the cooked dal to the masala paste.add water if gravy is too thick.let it simmer under low fire.add salt and sprinkle chopped cilantro.black eyed beans and channa masala is ready to be served.goes well with puris or roast dosa.

saute sliced onions in coconut oil,till it is translucent.now add sliced green chilli, chopped green beans and cubed potatoes.stir well and keep it closed till steam cooks the vegetables. add turmeric powder and salt once the vegetables are cooked through.stir well in intervals.add marinated and fried fresh shrimps(or rinsed and drained dry shrimps) to this mixture.temper mustard seeds, curry leaves,hing and add it to the kurma.
